Delicious Chocolate Pie with Graham Cracker Crust

This Chocolate Pie is a crowd favorite.  Insanely rich chocolate pie that everyone will love!  It is super easy to make and delicious to eat.

I remember when my hubby and I had our first Thanksgiving together. We went to his parents house for dinner. Everyone raved about this pie and how only Cricchios knew how to make it taste just right. I thought the pie tasted great, but didn’t think much about it at the time. Fast forward a few years to our first Thanksgiving away from home.

That first Thanksgiving I was given what I thought was the Cricchio Chocolate Pie recipe, but looking back now I know it wasn’t the complete recipe. Long story short, my mother in law had memory issues and never wrote down her recipe. She told me what she could remember. I can’t tell you how many times I made this pie to make it taste just right. My hubby would try it and give me his thoughts. I wanted it to be just right. Finally I created a version all my own and that became our family favorite.

Easy Chocolate Pie

  • 3/4 /cup granulated sugar (divided)
  • pinch salt
  • 1 cup milk (divided)
  • 1 envelope unflavored gelatin
  • 2 eggs, separated
  • 6 ounces (1 cup) semisweet chocolate pieces
  • 1 cup whipping cream
  • 1 teaspoon vanilla extract
  • 1 baked, 9 inch graham cracker crust pie shell

INSTRUCTIONS

In a saucepan, combine 1/2 cup of the sugar, salt and all but 2 tablespoons of the milk. In a small bowl, mix the remaining 2 tablespoons of milk with the unflavored gelatin. In another small bowl, beat the egg yolks.

Heat the milk mixture, stirring occasionally, until the sugar dissolves. Slowly pour the hot milk into the bowl with the egg yolks, stirring continually. Return to the saucepan over low heat, stirring, until slightly thickened.

Remove the milk mixture from heat. Immediately stir in the gelatin, then the chocolate pieces. When the chocolate has melted, transfer the mixture to a metal bowl and refrigerate, stirring occasionally until it begins to set.

Beat the egg whites until soft peaks form; beat in the remaining 1/4 cup of sugar. Fold into the chocolate mixture.

Whip the cream with vanilla

Fill the pie shell with alternating layers of the chocolate mixture and the whipped cream, starting with the chocolate mixture. Garnish with additional whipped cream if desired. Chill until set.
